Instructions

  1. Warm up milk in a large bowl in microwave for 1.5 minutes.
  2. Add in the yeast and 1 tbsp of the light brown sugar. Stir and let sit for 10 minutes.
  3. Add in butter and remaining brown sugar.
  4. Add flour in 1 cup at a time. Then add in the fine salt.
  5. Knead dough for 10 minutes by hand of with a stand mixer.
  6. Put dough into greased bowl and cover with greased cling wrap.
  7. Let rise for 1 hour until doubled in size. Preheat oven to 450F.
  8. Punch down dough and divide into 12-14 lumps. Roll each lump with hands into a thin rope.
  9. Combine the warm water and baking soda in a wide bowl.
  10. Cut dough into small pieces, then dip them in the baking soda water.
  11. Place pieces on greased baking sheet. Brush then with egg.
  12. For salty pretzel bite option: sprinkle the dough with coarse salt.
  13. Bake for 6-10 minutes.
  14. For sweet pretzel bite option: place dough into bag with cinnamon and sugar, then shake.
